So you want a chocolate chip cookie but don’t want to whip up a whooooole batch of chocolate chip cookies just for yourself? You’ve come to the right place. We present to you the best single serve dark chocolate chip cookie recipe you’ll ever try.

Let us set the scene for you. It’s 9 pm. You’re home alone. An intense craving for a gooey, warm dark chocolate chip cookie hits and you just can’t shake it. But
 you don’t want to make a whole batch of chocolate chip cookies. You just want one. Or two. That’s where this ooey gooey in the middle, crunchy on the outside individual chocolate chip cookie comes in.

What are single serve chocolate chip cookies?

This small batch chocolate chip cookie recipe makes one perfect chocolate chip cookie so you can satisfy your cravings without having a whole bunch of extra cookies laying around when you really want just one! Plus, it's made in one bowl and come together in under a half hour so it's the perfect midnight snack to whip up.

INGREDIENTS

  • 4 Smartbite Brown Rice + Chia Thins
  • 30 g peanut butter
  • 1/4 TSP vanilla extract
  • 1 TBSP maple syrup 
  • 1/8 TSP baking powder
  • 10 g maca powder
  • 20 g quality cocoa powder
  • 50-70 ml oat milk
  • 2 TBSPs dark chocolate chips
  • Salt

 

PROCEDURE

1. Preheat the oven to 350°F and line a baking sheet with parchment paper. Set aside.

2. In a food processor, pulse chia brown rice thins until you get flour like consistency. 

3. In a small mixing bowl combine all ingredients and mix well. Mix until smooth and homogenous.

4. Last, fold in the chocolate chips. Do not over mix.

5. Shape into 1 big cookie or 2 medium size cookies and place on your prepared cookie sheet. Top with extra chocolate chips. 

6. Bake for 11 minutes*, or until the edges are just lighter brown and the centers have puffed up but are still gooey.

7. Allow to cool before eating! 😋

Tips for making singe serve chocolate chip cookies

Everyone has their own secrets to making the perfect chocolate chip cookies but we swear by these. Get your notebooks out.

  • Make sure you measure your ingredients carefully: This single serve chocolate chip cookie majorly scales down your normal cookie recipe, so there is not much room for error. If you’re off by a teaspoon in a full recipe it’s not going to make that much of a difference, but that's not the case when it comes to a single serve version. Measure, measure, measure.
  • Only mix until just combined: Repeat after us, “overmixing ruins everything.” We know it can be fun to whisk away and overwork your dough as an excuse to eat more cookie dough, but do not do it. You will get dry, tough and very sad cookies.
  • Under bake them: When in doubt UNDER bake. The cookies will continue to bake as they cool. Plus, no one ever complained about a gooey center. 😉
