March Is Nutrition Month: Let's Soup Up Your Days With This Nutritious Zucchini Avocado Soup With Smartbite Croutons

March is Nutrition Month! It's also goodbye winterhello spring kinda month (who else is excited to welcome the first day of spring on March 20?) And what a better way to celebrate this occasion than with a bowl of nutritious spring soup? 

Soup is definitely having a moment in our household at the moment and we're not just here for it: We're right behind it, stoking the flames. 

With big flavor, bright green colour and short ingredient lists, this soup du jour is impressive enough to serve to friends but casual enough to slurp loudly when no one's around. Gather your blankets, light a candle, and queue up your favorite TV show and turn on the stove. It's soup time!!! 

 

Creamy zucchini avocado soup


This zucch + avo 🥑 soup screams nutrition! It’s:

〰 creamy
〰 garlicky
〰 savory
〰 comforting
〰 super green
〰 packed with veggies
〰 nutrient-rich
easy! 

 

TIME NEEDED: 2 HOURS 


INGREDIENTS 

SOUP BASE 

  • 2 TBSPs coconut oil
  • 1 white onion (finely chopped)
  • garlic cloves (roughly chopped)
  • 2 large zucchini (diced)
  • 2.5  3 cups low-sodium veggie broth 
  • 1 California Avocado (diced)
  • 4 large basil leaves
  • 1 lemon
  • salt + pepper 

CRUNCHY CROUTONS

 

Creamy zucchini avocado soup


PREPARATION

SOUP BASE 

1. Heat a large pan over medium/high heat. Add the coconut oil, onion and a pinch of salt and pepper and cook for about 3 minutes. Add the garlic and cook for 1 minute.
2. Add the zucchini, 1/2 teaspoon salt and 1/4 teaspoon pepper and cook for 5-7 minutes. Add the broth (start with 2.5 cups, you can always add more at the end). Bring to a boil then simmer for 5 minutes.
3. Turn off heat and add the basil, avocado, juice of 1 lemon, 1/2 teaspoon salt and pinch of pepper.
4. Transfer soup mixture (in batches) to a high powdered blender and blend until smooth. You can also use an immersion blender and blend right in the pot. If soup is too thick add a little more broth to thin it out. Add salt and pepper to taste and serve topped with avocado and Smartbite croutons (recipe below). Soup can be served hot 🥵 or chilled 🥶.
    CRUNCHY CROUTOUS
    1. Heat a small pan over medium/high heat. Add the coconut oil, crumbled Multigrain cakes and a pinch of salt and toast for about 3 minutes. 
    2. Add sunflower seeds and toast for additional minute or two. Set aside.
