This Sweet Dip Is All About Peanut Butter, So Of Course We Are Obsessed

Happy November aka National Peanut Butter Lovers Month — the perfect time to satisfy all of your peanut butter cravings. 😋

If you happily subsist on daily PB&J sandwiches and inhale jars of nut butter by the spoonful, you need this PB dip in your life. The magic lies in its ratio of peanut butter to yoghurt, which is absurdly high in favor of gooey peanut butter. The nut butter is studded with dark chocolate pieces, creating contrasting textures to ward off that sticky mouth feel that comes from eating too much nut butter. (Don’t lie, you know the feeling.) The fresh fruit pieces and crunchy rice cakes tie each component together.

One lick and you're gonna be in peanut butter heaven.

This dip is:

〰 Peanut buttery
〰 Not too sweet
〰 Perfectly creamy
〰 100% shareable
〰 Perfect for November

TIME NEEDED: 10 minutes

INGREDIENTS

  • 5 TBSPs peanut butter (you can go for both smooth or crunchy depending on your personal preference; our personal fave is Mumgry)
  • 6 TBSPs plant based yoghurt (we recommend going for either plain or vanilla)
  • 2 TBSPs maple syrup
  • 1 TSP cinnamon
  • 1/4 TSP vanilla extract
  • dark chocolate pieces (optional; our fave are Zimt's dark chocolate pieces)
  • your fave fresh fruit (hey it's November and you need a healthy dose of vitamins)
  • your fave Smartbite crackers (we recommend Original Rice Cakes or Rice Cakes with Quinoa

PREPARATION

1. In a bowl mix together peanut butter with yoghurt.

2. Slowly pour in maple syrup while mixing all ingredients together.

3. Then add cinnamon, vanilla extract and chocolate pieces and give it one very last stir.

4. Serve with your favourite fruit pieces 🍏🍌🍍🥝🍎 for that healthy dose of vitamins and your fave Smartbite rice cakes for that extra crunch. Happy November Smartbite friends. 🥶🥶🥶

You'll never look at regular ice cream sandwich the same after your try these!

The day we mastered the caramelized rice cakes, we knew we had to take it to the next level—with it being summertime and all—so we sandwiched some ice cream between 2 crispy rice crackers and dipped it in dark chocolate and sprinkles for good measure. Best idea we’ve ever had.

This easy chickpea salad is one of our fave salads. We love how quick and simple it is. Eat this straight out of the bowl with your crunchy multigrain crackers or use it to top salad greens. We love the combination of avocado, apple + vegan yoghurt, but the salad is just as delicious with some fresh herbs — try basil, parsley, or even fresh mint.
