This Tomato + Basil Bruschetta Is Way More Chill Than Your August Vacation

We’ll admit it: we snack all day every day. Rice and corn cakes — or crispbreads or bruschetta or whatever — is the perfect vehicle for almost every kind of flavor, and can serve as every type of meal, from indulgent breakfast to afternoon snack, party appetizer to light dinner. Need proof?

What does this tomato + basil bruschetta taste like? Little crispy bites of Italian heaven. It is:

Savory
Flavorful
Crispy
Satisfying
Healthy

 

INGREDIENTS

  • 4 large tomatoes
  • Handful of freshly chopped basil
  • 1 tbsp extra virgin olive oil
  • 2 tsps balsamic vinegar
  • Seeds from 1/2 of pomegranate apple
  • Salt + pepper + dry oregano to taste
  • Fresh oregano leaves

 

INSTRUCTIONS

  1. Remove seeds and dice tomatoes into small pieces.
  2. Add freshly chopped basil leaves, olive oil, balsamic vinegar + pomegranate seeds.
  3. Sprinkle with salt, pepper and oregano (both dry and fresh) to taste.
  4. Scoop into a bowl and place in fridge to chill for 20 minutes.
