We love this summer chickpea avocado 🥑 apple salad because it’s light and so easy to make! You are looking at about 15 minutes and you’re in chickpea salad heaven. We’re also pretty big fans of chickpeas around here. We’ve already shared our vegan chickpea cookie dough, this avocado + chickpea salad and also this sweet pea hummus

This refreshing chickpea salad is one of our favsalads.

Eat this straight out of the bowl with your crunchy multigrain crackers or use it to top salad greens. We love the combination of avocado, apple + vegan yoghurt, but the salad is just as delicious with some fresh herbs — try basil, parsley, dill or even fresh mint.

TIME NEEDED: 15 minutes 

INGREDIENTS

  • 1 can of chickpea (15 oz | 425 grams) 
  • 2 small apples 
  • 1 small white onion 
  • 1/2 cup pecans 
  • 2 avocados 
  • 1 stalk celery 
  • 1 cup vegan yoghurt 
  • 1 TSP mustard 
  • salt to taste 
  • black pepper to taste 
  • Smartbite Multigrain cakes 

 

PREPARATION

1. Open, drain and rinse the chickpeas and then add to a large bowl.

2. Chop apples, onion, avocado, celery and pecans into smaller pieces, add to the bowl with chickpea and mix all ingredients together. 

3. In a small bowl whisk together vegan yoghurt, mustard, salt and black pepper. Pour over the chickpea mixture and mix well.

4. Serve on Smartbite multigrain cakes (you can toast them in the toaster oven if you like them warm) and with your favourite leafy greens.

HOW TO MAKE THE BEST CHICKPEA SALAD

Chickpeas are a versatile base for salads. They are nutritious, taste great, and inexpensive. To make the best chickpea salad, keep these tips in mind:

Use quality chickpeas. You can use canned chickpeas — buy a brand you like (we love Eden Organic canned beans). Or you can cook dried chickpeas yourself. It takes a bit of time but they keep in the fridge and freezer for a while. 

Add vegetables for color and texture. Any variety of cucumber works, but I usually buy the seedless variety (often sold wrapped in plastic) or the smaller, thin-skinned cucumbers. I like these because you don’t need to peel or remove seeds. If you’re using thicker-skinned cucumbers, give them a peel.

Use a bright and flavorful salad dressing. Chickpeas are a fantastic salad base, but they don’t have much flavor by themselves. That’s why we love tossing them with an ultra-flavorful dressing. As the salad sits, the chickpeas absorb the dressing and get more and more delicious over time.

Use lots of fresh herbs. We reach for lots of fresh dill, but most tender herbs will work here. Think about mint, parsley, dill, basil or a combination of herbs.

Quick, filling and made mostly of pantry ingredients, this chili/tortilla soup mash-up is calling your name. (Shhh. Listen closely.) Garnish it with the toppings of your choice: we like avocado, vegan sour cream, and chopped cilantro, but you can add shredded cheeze, pickled or fresh jalapeños, and/or sliced scallions or radishes. 

You can use any tortilla chips you like (we recommend going with Corn Quinoa crackers)—they add body and flavor to the soup itself and go on top for extra oomph. You could also fry or bake your own stale tortillas, cut into strips.
